Amylase enzyme is used in a mash to convert starches to sugars. It is especially useful when using enzyme deficient grains such as corn or other flaked adjunct. Usage varies. 1tsp. Breaks 1,4 linkage in starch during liquefication, producing dextrin and a small amount of maltose. Leaves 1,6 links, therefore self-limiting.
